Turmeric chicken patties with steamed greens

Ingredients

  • 2 spring onions, chopped
  • 1 carrot, grated
  • 1 zucchini, grated
  • 200g grass-fed chicken mince
  • 1 egg
  • 1 handful chopped parsley
  • 1 tbs turmeric
  • Tamari soy sauce
  • 1 handful green beans
  • 1 bunch asparagus
  • Olive oil

Place the spring onions, carrot and zucchini in a bowl, and add the mince, egg, parsley, turmeric and a splash of soy sauce. Mix well, then use your hands to shape the mixture into 4 patties.

Cook the patties in a non-stick frying pan over medium heat, until they’re cooked through.

Meanwhile, steam the beans and asparagus until tender, then serve with the patties.
