Turkey lettuce cups
- 200g turkey breast, shredded
- 1 cup bean sprouts
- 1 large carrot, peeled and cut into matchsticks
- 1 handful mint leaves
- 1 handful coriander
- 4 iceberg lettuce cups
- 2 tbs crushed peanuts
- 1 tbs tamari soy sauce
- 1 tbs lime juice
- 1 tbs honey
- ¼ tsp finely grated ginger
- 1 tsp sesame oil
Combine the turkey, bean sprouts, carrot, mint, coriander and peanuts in a large bowl.
To make the dressing, combine all the ingredients in a glass jar, screw on the lid and shake well.
Drizzle the dressing over the turkey mix and gently toss to coat, then divide the mixture evenly among the lettuce cups and serve.
