Ingredients

  • 2 cups mixed flaxseeds, pumpkin, chia and sesame seeds
  • 1 tbs turmeric
  • 1 tsp paprika
  • ¼ cup chopped almonds
  • ¼ cup chopped walnuts
  • 1½ cups quinoa flakes
  • ½ cup psyllium husks
  • 1 tsp sea salt
  • ¼ cup melted coconut oil

makes 1 loaf

Mix the dry ingredients in a large bowl, then add 1 cup of water and the coconut oil and combine well. Cover and set aside on the bench for a few hours or overnight.

Preheat the oven to 160°C. Spoon the mixture into a lined loaf tin and smooth the top with your hands. Place in the oven and cook for 40 minutes.

Remove the loaf from the tin, place it upside down on an oven rack and cook for another hour.

Allow to cool completely before slicing.

This is great served in 1cm thick slices topped with a mashed boiled egg.
