Spaghetti with smoked salmon, lemon & chilli

Ingredients

  • Sea salt and freshly ground black pepper
  • 60g spaghetti, uncooked
  • 100g smoked or hot smoked salmon, sliced
  • 2 tsp lemon zest
  • 1 tsp olive oil
  • 2 cups rocket
  • ½ tsp chilli flakes
  • Black olives (optional)

Directions

Spaghetti with smoked salmon, lemon & chilli

serves 1

Cook the spaghetti in a large pot of boiling, salted water until al dente, then drain.

In a large bowl, add the salmon, lemon zest, oil and rocket. Toss through the spaghetti. The pasta will heat through the salmon.

Serve with a sprinkling of chilli and pepper, plus a few black olives.
