Red quinoa salmon sushi rolls
- 1 cup red quinoa
- 4 sheets nori seaweed
- ½ cucumber, peeled, seeds removed and cut into small strips
- 1 avocado peeled, stone removed and cut into small strips
- Pickled ginger
- 200g smoked salmon slices
In a medium saucepan bring 1½ cups of water to the boil, add the quinoa and stir. Cook until the quinoa becomes translucent and tender, then drain and set aside to cool.
Place one sheet of nori on a chopping board, spread a thin layer of quinoa on top and press into a thin layer to cover. Place the cucumber, avocado, ginger and salmon in the centre of the quinoa. Lift the end of the nori and gently roll it over the ingredients, pressing gently, to make a complete roll. Repeat with the remaining ingredients and serve.
