Nectarine bircher muesli
- 2 cups rolled oats
- 400ml apple juice
- 2 white nectarines ½ cup roughly
- chopped dried fruit (such as figs, prunes and dates)
- 50g macadamia nuts, roughly chopped
- 1 cup vanilla yoghurt
- 1/3 cup coconut flakes, toasted
- 1 punnet raspberries
Combine the oats and apple juice in a medium glass or ceramic bowl. Cover with plastic wrap and place in the fridge overnight to soak.
Coarsely grate 1½ nectarines, discarding the skin. Add the nectarine, dried fruit, macadamias, yoghurt, raspberries and 2/3 of the coconut to the oat mixture and stir to combine.
Thinly slice the remaining nectarine. Divide the bircher between four glasses, garnish with the remaining nectarine and coconut and serve.
