Ginger salmon parcels
- 2 x 150g pieces salmon
- 1 unwaxed lemon, juiced
- 2 tsp soy sauce
- 1 tsp of ginger
- 2 tsp extra virgin olive oil
- 1 sprig parsley
- 1 garlic clove, halved
Preheat the oven to 180°C. Place the lemon, soy sauce, ginger and oil in a bowl and whisk well.
Cut two pieces of foil to twice the size of the fish and lay them on a baking tray. Pour over 1 spoonful of the sauce and lay a slice of salmon in each one. Cover with more sauce, and lay half a clove of garlic and a pinch of parsley on each slice.
Seal the foil parcels and place them in the oven for 10 minutes, then serve them directly onto the plates. Carefully lift the salmon skins off before eating.
