Easy apple & chicken salad
- 200g cold, cooked organic chicken breast, diced
- 1 apple, diced
- 2 celery stalks, diced
- 2 spring onions, chopped
- 30g chopped walnuts
- 1 tbs apple cider vinegar
- 2 tbs avocado oil (or extra virgin olive oil)
- Pink Himalayan salt and freshly ground black pepper
In a large bowl, toss together the chicken, apple, celery, onions and walnuts.
In a separate bowl, whisk together the vinegar and oil and pour over the salad.
Season, mix well and serve.
